Grillo Riserva, 2023 Firma del Tempo by Al Cantara Winery, Sicily, Italy
White Wine
Firma del Tempo - The Signature of Time
This wine is one of Bruno Fina's special project, Orizzonti to create the best of Sicilian wine and put them on the world stage
Grape variety: 100% Grillo.
Vineyard: Single vineyard “cru” in the Riserva Naturale dello Stagnone area in Western
Cellar work: Grapes are destemmed and softly pressed; about 20% of the wine ferments in new barriques at ~16 °C; the rest presumably in stainless or large wood.
Ageing: The wine rests on fine lees with bâtonnage for ~12 months, followed by ~2 months of bottle refinement.
Alcohol level: Approximately 13.5%.
Tasting Notes
Appearance: Golden-yellow color.
Aroma / Nose: Intense citrus and bergamot, notes of Mediterranean scrub (garrigue), chamomile; strong iodine and sea-breeze salinity reflect the coastal terroir.
Palate / Taste: Fresh, tangy and sharply mineral; strong savoury and saline backbone, lively acidity, and a clear sense of Mediterranean character.
Finish: Persistent and evocative of sea-air and aromatic herbs, with a clean, slightly briny persistence.
