Grapes: 100% Nero d'Avola, indigenous Sicilian red grape.
Best selected hillside west Sicilian vineyards, Menfi area.
Vinification: Harvest mid September, classic red vinification, soft pressing, five days of fermentation, maceration with skins at 28-30C for 10 days.
Characteristics: Intense garnet bright red with violate reflections. Dry taste, full-bodied, generous, ample. Rich, round spicy, aromas of green pepper and prune. Flavors of prune, tobacco and vanilla. Correctly stored may be aged for 4/5 years.
Analysis: Alc. vol.: 13.5%; Acidity 5.60 g/l; residual sugar 2.5 g/l; dry extract 28 g/l.
Food suggestions: Excellent with pasta dishes, red and braised meats, game, hard spicy cheeses.
Serving temperature: 18C.
