Chassagne Montrachet, 2017 1st Cru Morgeot, by Bachey Legros

100% Chardonnay. Gently passed through a pneumatic press at low pressure soon after harvesting.  The  alcoholic fermentation takes place at very low temperatures, in barrel. We pay particular attention to the quality of the lees. It is this component that contributes the roundness and complexity of aroma that we are looking for.  We check that there is a sufficient presence of lees when the must is transferred in to barrel.  The wine will then normally spend around 12 to 15 months maturing in cask, depending on the character of the  vintage, with bâtonnage  performed regularly until the onset of the malolactic fermentation.
