Delgado Dry Oloroso Sherry, Jerez, Xeres, Spain
Dry Oloroso – Dry Oloroso sherry is one of two basic sherry styles (Fino is the other), which is its own sherry style or may be used to produce other sherry styles (Medium Oloroso and Cream). Produced from full bodied must that is fortified to more than 17% alcohol, which is too high to allow Flor to grow, the casks are then filled 100%, and the sherry ages under its own natural fermentation. The Atlantic influence and Sanlucar’s unique microclimate combine to increase the acidity.
