Grapes Carricante and Chardonnay, grown high on Mt Etna in Sicily

Ageing: In contact with the yeasts for over 32 months with frequent “Coup de poignet” to favor the complexity on the nose and palate.

Distinguished by a white, intense mousse and exuberant bead that make it a sparkling wine of rare intensity. The elegance of Mount Etna’s wines is faithfully interpreted by Gaudensius, which represents a unique and evolving land at the highest level.

Color: Pale straw yellow tending to bright gold.

Nose: Fresh and elegant, complex bouquet of white fruits, acacia flower, hazelnut and honey fragrances exalted by mineral notes.

Palate: Delicate, elegant, expressing great fineness, great aromatic persistence on the palate

Perlage: fine and concentrated.

Quality soil acknowledgement and know how regarding the interaction between Vineyard-Land are the keys to intepret Firriato’s work in all its estates. This working conduct is much more evident in the Cavanera Etnea estate, where the winery produces Gaudensius Blanc de Blancs, spumante produced according to the classic method employing white grapes of Carricante and Chardonnay. Carricante grapes are tipycal of the Etna volcano and grow in the Cavanera Etnea estate, while Chardonnay grapes express all the hilly features of a cru growing in the Borgo Guarine estate, within the Trapani countryside, where these grapes can be used for the base wine of the Spumante just like those growing in the Champagne region.
