Winemaking: After pressing, fermentation continues in small oak barrels where it ages for about 16 months. Maturation continues for 6-12 months in steel tanks before bottling. 6 months of aging in bottle. Longevity: Drink now or keep up to 10-12 years. Matches: Excellent with grilled meats.
