Soil characteristics: limestone and clay hills
Vinification: grapes are carefully selected in the cellar, then crushed and de-stemmed and then kept in steel tanks. Fermentation of the skins enables the extraction of all their valuable substances; fruity polyphenols and tannins. Each step takes place at a controlled temperature. Once the skins are separated, the wine goes into steel silos.
Aged for 3 years in large oak barrels.
Annual production: about 30,000 bottles
Color: deep red with purple hues
Bouquet: intense and persistent, fine, slightly spicy
Palate: dry, warm, soft, quite tannic, tasty
Food pairings: chicken with soy sauce, onion soup, costini with bacon, parmesan cheese
Cellaring: very long-lived, about 15 years
