Olive Oil | EVOO
We import these olive oils directly from wineries that we buy wine from. We import very small quantities. These are the Real Italian Oils. I have walked the olive orchards when I visited the Wineries. We listed the type of olives in each Oil.
These oils are not for cooking and getting really hot. They are for finishing up a dish my adding the oil when it done. They are also excellent in salads and on bread with a glass of wine.
Extra-Virgin Olive Oil (EVOO) comes from virgin oil production only and is of higher quality. EVOO contains no more than 0.8% free acidity and is judged to have a superior taste with some fruitiness and no defined sensory defects.
EVOO accounts for less than 10% of oil in many producing countries; the percentage is far higher in the Mediterranean countries (Greece: 80%, Italy: 65%, Spain 30%).
