On the one acre Vineyard of Al Cantara on Mt Etna Sicily

The Etna Cabernet Sauvignon 2018 by Al-Cantara Winery is a 100% Cabernet Sauvignon wine produced in Randazzo, Sicily.

The Feudo S. Anastasia vineyard sits on Mt Etna, 620 meters above sea level. The vineyard density is 6,000 vines per hectare, and the vines are 12 years old.

The soil type is volcanic/clayey, which is rich in minerals. The Gouyot system produces the wine and it undergoes fermentation for 10-12 days.

The malolactic fermentation occurs spontaneously after the alcoholic fermentation. The wine is aged for 12 months in barrels, followed by 12 months in steel, and finally, 6 months in the bottle.

The production is limited to 3,000 bottles, and the first vintage was in 2008. The wine is between 13.5% and 14.5% alcohol and can be aged for 8-10 years. Produced in Randazzo, Italy.
