The grapes are dried in the sun after harvesting before they are pressed to enhance their aromatic qualities. The Atlantic influence and the unique microclimate of Sanlucar de Barrameda provide the ideal environment for aging our Pedro Ximenez sherry by imparting the proper amount of acidity to help carry the flavor through the long finish.
