Cream – Cream sherry is produced by blending Dry Oloroso with Pedro Ximenez to a blend ratio of about 60/40. The Pedro Ximenez adds a raisiny characteristic to the nuttiness of the Dry Oloroso resulting in a very special dessert sherry. The Atlantic influence and Sanlucar’s unique microclimate combine to increase the acidity, which helps carry the flavor through the finish.
