Dry Amontillado – Dry Amontillado sherry is produced from Manzanilla that has undergone slight oxidation. Flor, the protective yeast layer on the surface of Manzanilla, may die twice a year due to climatic changes, subjecting the Manzanilla to oxidation. Flor may also be killed by adding additional alcohol. The Atlantic influence and Sanlucar’s unique microclimate combine to increase the acidity, which helps carry the flavor through the long finish.
