Manzanilla – Manzanilla is produced from Fino sherry. Manzanillas are aged longer than Fino and can only be produced in the village of Sanlucar de Barrameda, thereby making the village its own demarcated wine region. The humidity and marine climate in Sanlucar enables the Flor or yeast that grows on the surface during aging to flourish. This longer aging under the Flor refines the sherry, making it very light, extra dry, and extremely delicate.
